Well, for some hosts the infrastructure is MUCH more complicated then just an OS install.
We have a very advanced back end with Public AND Private Networks for EACH server, as well as 2 VLAN's per machine, and a whole slew of records and associations to be made for bandwidth monitoring, remote power control, and all our automated features. So it does take someone highly experienced in our system to do a manual install of a new machine and integrate it into our system. While it won't take 2-3 days, it is still a copious amount of work for 1 person to do with the routing (VLANs, IP assignments) on both customer access switches as well as the distribution switches, racking (rails, etc), ensuring neat cable runs (single or double power/ double or triple network cables), OS Install, OS Updates, internal record keeping and port/resource usages, and more.
Soon we will have all this automated on the customer level, where customers will be able to perform their own OS Reloads, with automated DNS records (forward and reverse), Automated RWhois and a ton more! It will be a crazy automated and self-sufficient service experience where someone who is proficient with sysadmin will never need to contact us for anything other than some critical hardware failure. Any other type of outage or issue will be completely able to be self-resolved -- or they can choose to be Fully Managed and we will do all that for them, but for those that like admin'ing their own machines, its a very awesome platform we are developing!
There's a lot that goes into one of our server installs and I'm sure a lot of other hosts that have more than just a basic server setup of power and internet.
