Vegetable of the Day: Carrots.
One of my favourite vegetables.. How do you prepare them?
I generally roast them with potatoes, parsnips, onions and a head of garlic. Another way I like is cutting them into coins, single layer in a pan, fill the pan with water just until the height of the carrots, and add a bit of sugar.. Cover and cook for an hour on low. I second the roasting.. but usually do the carrots with either butter and thyme... or with the parsnips, onion and brussel sprouts.. with garlic, butter and a bit of honey.. the honey forms a glaze.. making them extra tasty.
Also.. I make carrot and ginger soup.. very quick and easy.. and good for ya too. But always remember.. Vegetables are a SIDE dish.. and never main course.. Like Salad.. its a promissory note that real food is coming. |

They are nice if you sautee them in a little butter, brown sugar with a splash of orange juice. keep them more firm, they are delish this way.

Carrot is fine once you wipe the dirt off of it. I like to wash them rather than peel, same as taters. I like to take a peeler and make thin peels in salad, it's good and sweet.
Never been a huge fan of cooked carrots, which I know is weird. They're just better raw imho. |
