Speaking of that, I found a great recipe for Buffalo dip.
Just some chicken (rotisserie or caned), cream cheese, bleu cheese dip or ranch, and franks red hot or preferred sauce.

I'm making pulled pork sandwiches. Starting the crockpot with the pork roast in it on Saturday evening.

Snack is going to be cheese filled fried wontons. Recently got a recipe that's really easy to do and everyone loves them.

Had the same one, tried it with canned...coupon with the recipe...and it wasn't great.

Same recipe with a rotisserie chicken and we couldn't make enough of it, it was soo good.

The one I mentioned above blows the doors off of this.

V_RocKs 01-28-2009 02:51 PM

writing all of this down.. sorry for being a lurker.

Ohh wait...

Buy uncooked (because pre-cooked will shrink like a mofo) shrimp. Not huge mofos. Something bit sized. Deskinned and devained. About the size of your entire pinky... not that salad tiny shit.

Also get cut japapenos.. Nachos style I think they call em. Basically just cut sideways so they look like pinwheels.

Mix cup of flour, 1/2 tsp salt, 1 tsp pepper, 1/2 tsp paprika. Then put it into a big zip lock bag.

Seperate bowl mix 2 eggs and some milk like making scrabbled eggs.

Dip some shrimp into the eggs and then drop them into the zip lock and shake, shake, shake... Drop in fryer. Now do the same with some jalapenos. Once golden remove. Don't let them stay in too long or the shrimp will shrivel up.

Now make a sweet and sour sauce on the stove:

* 1 small can pineapple juice (or juice from a 15-1/4 oz. can pineapple chunks, drained)
* 1/4 cup ketchup
* 1/4 cup brown sugar
* 1/4 cup vinegar
* 1 1/2 tablespoons cornstarch
* 1/2 teaspoon granulated garlic
* 1/4 teaspoon mustard powder
* 1 tablespoon Worcestershire sauce (or less)
* 1/2 teaspoon ground ginger

Mix all of that shit in a sauce pan and cook on medium heat until it thickens up a little and is boiling. Cool and throw in fridge. Actually, do this sauce first.

We always make a shirmp and cream cheese dip. Take some cream cheese and mix it on low speed with some sour cream, green onions and cocktail sauce. Throw in a little salt and pepper then pour shrimp in cocktail sauce over it and use it as a dip with crackers like Ritz. It rocks.

Ya I could not even bring myself to buy canned chicken but tossed it in anyways since the recipe says it.
I think I will give the one you posted a shot.

My Super Bowl party is lasting 2 days (as usual)
Saturday night we are having a pineapple an cream cheese souffle, spiral cut ham, potato and sausage stuffing and a strawberry/rhubarb upside down cake. We will be playing xbox and hanging out. Then crash.

Sunday morning is Belgian waffles.

As the game approaches we will be having the shrimp dip from my post above, BBQ ribs, sausage, meats and cheeses to make yourself mini sandwiches with and some kind of cheese cake.

By the time it is over I will probably be sick and need to sleep for 2 days :)

It calls for 1/4 Frank's or Red Hot and 1 chicken and 1 bag of shredded cheddar.

Break up all the chicken, toss in the red hot and the bag of shredded cheese. Ball them up, roll them in the eggs and breadcrumbs, toss them in the fryer at 350. Dip in Blue Cheese.

They're simple to make and one of the best things to come out of my fryer in a while.

Zuzana Designs 01-28-2009 04:12 PM

A couple more favorites are a prosciutto and cream cheese stuffed mushroom (onions, garlic, seasoning, mushroom stems and cream cheese satueed and stuffed in the caps, and then baked.)
I also do a oriental chicken stuffed romain leaf (chicken, hoisen, ginger, garlic and orange juice all sauteed and shredded) Take big romain lettuce leaf and put some of the yummy sauteed chicken on it along with some sour cream and an orange wedge and stuff your face...sooooo good!

Do they taste OK if they sit for awhile and are no longer hot?

Not quite as good, but ok, yeah you bet. I actually have some in the fridge I have been heating up in the microwave and eating. That will be the first thing I go for when I get home.

Leaving the office now. Mmmmmmmm.

candyflip 01-28-2009 04:23 PM

Recipe came from Cookin' With Big Daddy or something like that on Food Network.

OHHH I've been dying for that for over two years. Someone served them at a Christmas party and I can't say I was a water chesnut fan but those are excellent. I was unaware of the brown sugar part though. Great idea! I'm making some of those asap.
