Video editing is all about raw CPU power if I'm not mistaken, so I'd say the MBP with the optional 2.8 CPU then upgrade the HD to one of the 7200 RPM ones.

I got a macpro quote up to around 45k, and I think I still could've squeezed some extra power out of it...

Figure out your budget and up options in this order for performance.

RAM
HDS(Raid Pref to cut down render times)
Vid Cards
Offboard Renderers

Regardless, don't wast your money buying RAM from Apple, their markup is about 400% what normal retail is.
