How are you seasoning your MEAT? (Turkey)
I will only be cooking a turkey breast since only myself and my two kids will be eating it.....So I sprinkled some dry Dill over it, then put a whole package of fresh herb rub consisting of Thyme, Marjoram, Sage, and Rosemary, sprinkled on some of the universal black folks seasonings (seasoned salt & garlic powder), and then finished it off with some Colt 45 Malt Liquor...It's sitting in the fridge soaking up the mixture right now....
I will cook it in the oven at 350 tightly covered for an hour and then give it another 20 minutes to crisp the skin... |
that sounds like one fucked up piece of meat you're going to have, why wouldn't you cook a whole small turkey? it's part of the fun

Mine's a 12 lb bird. I don't go too nuts with the spices etc, just some seasoning salt, garlic powder, and a mix of melted butter with a small splash of tobasco. Stuffed with Onion & Sage dressing.
Cooked for the first half hour at 350, then down to 300 for a nice slow roasting for maybe 3 more hours, basting every 20 mins or so. (covered the whole time |

I like to do the injections of seasonings because if you just sprinkle on seasonings, only the outside is seasoned. Tony Sachery makes a really good marinade injection.
