How are you seasoning your MEAT? (Turkey)
 
I will only be cooking a turkey breast since only myself and my two kids will be eating it.....So I sprinkled some dry Dill over it, then put a whole package of fresh herb rub consisting of Thyme, Marjoram, Sage, and Rosemary, sprinkled on some of the universal black folks seasonings (seasoned salt & garlic powder), and then finished it off with some Colt 45 Malt Liquor...It's sitting in the fridge soaking up the mixture right now....

I will cook it in the oven at 350 tightly covered for an hour and then give it another 20 minutes to crisp the skin...

that sounds like one fucked up piece of meat you're going to have, why wouldn't you cook a whole small turkey? it's part of the fun

Mine's a 12 lb bird. I don't go too nuts with the spices etc, just some seasoning salt, garlic powder, and a mix of melted butter with a small splash of tobasco. Stuffed with Onion & Sage dressing.

Cooked for the first half hour at 350, then down to 300 for a nice slow roasting for maybe 3 more hours, basting every 20 mins or so. (covered the whole time

The best turkey I ever had was a Butterball turkey breast last year...I couldn't find it this year so I had to buy another brand....

Plus, I just like to cut into it and get the meat I like without the hassle...And I know I'm not going to bother with eating the dark meat of a small turkey.....

Fuck man I forgot to rub it down with bacon fat!!!...I'm about to go do that now.

I like to do the injections of seasonings because if you just sprinkle on seasonings, only the outside is seasoned. Tony Sachery makes a really good marinade injection.
