What's cooking for Thanksgiving? You always make quality food posts, so just curious. :)

Ugh just found this. Had to spend yesterday and the day before it in the hospital (yeah bills!). On with the assorted meal plan that I will be transporting and doing the final cooking at my grandmother in laws house. I will break it up into snacks/appetizers, main meal, and then desserts.

Apps:

  • four types of homemade olives, assorted soaks. Herbed, garlic stuffed, spicy, and plain (both green and black types)
  • Large pot of mulled hot cider

Main meal:
  • Brined turkey (24 hour or so seasoned brine) will be roasted.
  • Dressing with poultry livers and a fast assortment of breads that I have been chunking and saving in the freezer over past 3 months.
  • A whole berry cranberry sauce with orange and cinnamon.
  • Mashed potatoes. (standard cream/butter).
  • Turkey gravy, uses both drippings and stock made from turkey wings I bought a few days ago.
  • Sweet potatoes in country fry shape, with maple syrup and some with marshmallows.
  • Roasted brussel sprouts with a cheddar sauce (optional).
  • Mixed greens salad with pomegranate and apple, a pomegranate vinaigrette along with some bottled dressings.
  • Yeast based rolls.

Desserts:
  • Bread pudding.
  • Pumpkin rum pie with whipped cream.
  • Apple pie.
  • Cheese cake with a tangerine reduction sauce.
  • Chocolate silk pie with banana slice layer inside - has a cookie crust as well.

Also have some assorted wines, sodas, milk, coffee's, etc. to drink. Oh yeah some buttermilk for my uncle in law who must have it to drink.

Good news is I have most of it prepped, then I get to start in on it around 10am to finish rest.

That all sounds excellent. Good call with the olives - I have a meat and cheese plate I put together, but a good mix of olives with it will hit the spot. There's a couple specialty stores here that should be open tomorrow and normally have a pretty good selection.

I knew I'd get something out of this thread. Thanks for sharing :)

Hey Mitch, working on a pumpkin cheesecake right now. Never made anything like that before, but it seems easy enough. Tomorrow I'll be spending the morning and early afternoon with my family and then head over to K's house afterwards. Family, friends, and food... should be a good day. Not counting kids (could be anywhere from 1-6 of them from ages 1 to 7) there should be 15 adults expected. Amounts have been properly adjusted of course, like there are 2 turkeys being done instead of one massive one. I hate cooking any bird over 20 pounds as they are too fickle and take to long. Then to be perfectly honest. The thanksgiving meal is just the catalyst. In my mind the real reason behind cooking all of this (family aside) is for the left overs and more importantly the post thanksgiving sandwich.

My real only pain that I had which took a bit of work was making the olives. Had to really search to find a supplier of lye. Had no issue with obtaining the olives though as we have some friends with olive tree's that just grow them as well tree's, and let the fruit fall and rot. The whole process took me a bit of time aside from the lye treatments and also doing a brine cured version as well. Really can not stand salt cured ones myself.

Most of the fruits are also local and so was a few of the cheeses.

Everyone is so different. It all started as a youth. Every thanksgiving I had with my grandmother had a long standing ritual. Later that night on thanksgiving all or most of the men and if you were old enough kids would build and pack up a left over sandwich. It was a ritual that on the following day most of the women would have the day planed to go out shopping and the guys would take their packed lunch and leave in the early AM to go fishing on the delta. That is where it all started. Naturally you would want it large and very filling.

My favorite or perfect in my mind sandwich would be:
Dutch crunch roll or hoagie roll.
Thin layer of butter on both sides of the bread.
Then a bit of mayo on the bottom with some cracked pepper.
Add a layer of cranberry sauce.
Turkey slices but has to be a mix of dark and white meat, then salted.
Take some stuffing and sort of shape it to size of bread and compress it, then add over turkey.
Add some dark brown mustard to top piece of buttered bread.
Close, wrap in parchment tightly.

Pack with a few deviled eggs. Thermos of coco spiked coffee. If able also some potato cakes.

Potato cakes are made from some spare mashed potatoes, about a third of the amount of sweet potato, some left over cheese diced up super fine, some salt and pepper- mix up but do not over work starch. Then shape into almost hamburger shape and dredge in seasoned flour. Saute until golden in butter. (can be eaten hot or cold). Have also added left over cured meats like ham, salami, etc.
