I think it's chemicals,you noticed when he tapped it, it allowed the two to mix causing it to freeze.it's the same way those instant ice packs work

The beer is just super cooled (prolly chilled in a blast freezer). Then you can disturb the CO2 by hitting or tapping ig. Causing a ice crystal chain reaction.

Water same processes but instead of tapping to release CO2 which is easier, you shake hard to cause a few air bubbles again setting off an ice crystal chain reaction.

No special chemicals or such needed for either.
