I launched a podcast show a while back after doing a few months of research. I ended up using Adobe Audition to record, mix and render out my shows (there is free software that'll do this though if you want to record it on the cheap). I bought a one month subscription to Lynda.com and they had a huge tutorial on how to use Audition and I was up and rolling with it within a few days.
Regarding a mic, they now have some really nice mics that connect thru your USB. By the time you record them into your software, EQ them out and clean up the noise, they sound amazing.
