It depends on the fire, but five hours. The only problem compared to your method is that you have to flip the pig, if you want the bottom roasted. If not it will still get cooked, but it will be too tender. The Skin in particular will be tender if you don't flip it.
With your method, the metal bar cooks the inside, so it has it's drawbacks aswell.
LaCajaChina, cooks the big evenly, no need to worry about haveing to much charcoal on the right side or the left side of the box.
To the people complaining, saying disgusting, etc. etc. ... wtf did you think you were going to see with a title like "most tasty pig", nice, lean slices of tenderloin?
