I love Indian food...
You were correct about the samosa - it's a very common appetizer, and can be prepared in a variety of styles, and dipped in various sauces. One of the guys on my tennis team is Indian, and when we host home matches, he always brings some variation of samosas. My personal favorite main course would have to be either Tandoori or Masala Chicken. There are so many regional styles of cooking, that if you are unfamiliar with Indian cuisine, then I recommend that you go to a lunch buffet and try out several dishes to determine what you like best (it's a really great value too). Also, be sure to try a drink called a Mango Lassi sometime too. It's non-alcoholic, but tastes delicious (it's like a mango smoothie). Namaste, ADG |

I like to make a lot of vegetarian indian food, because that style of cooking lends well to vegetables. Plus if you wanna enjoy eating veggies for a carnivore such as myself, look no further than the country that's like 75% vegetarian for advice. That was really the reason I started to learn a bit, I figured if anyone knows how to cook vegetables it's Indians.
You need to stock up a little at first though. Need fresh yogurt, masalas, curry powders or leaves, turmeric and other spices, dried chiles, special flours, few different kinds of lentils and dried peas, a bottle of ghee, and some basmati rice. Mmm.. Asephetida is another one, that shit smells crazy. Some tamarind.. fuck the list goes on. :) If you ever had their "Mango Lassi" which is like a mango shake, it's super simple.. mango, plain yogurt, bit of sugar... blend. |
i dunno what the shit was called even, but it was like spicey pickled peppers nd shit on this weird flatbread. i was working in an orchard that this east indian family owned, and they'd bring me chai tea and this weird pickled shit every day at lunch. it was spicy as hell, but the bread and the chai tea took the burning down. was really good. god damn i want some more of that stuff...
