So how many keywords / phrases do you go for with your site?

Do you try to get them all them keywords or just concentrate on a few specific ones?

Depends on the site and what you plan with it, can range from 1 to pretty much unlimited. A one page wonder is a little different from a huge WP MU installation, just as an example.
