Is there an easy way to have some posts NOT show up on the main page but just appear in their category?

I think I'll just setup another blog on a subdomain.

its a newspaper-style site. i'm trying to give it the same look and feel. i think the only way is using subdomains but that will do it nicely i think

Yes, set the first page to be a 'page' not an index of blog posts.

change the date of the post to something older than the last post on the page
