How do you determine the relative importance (potential traffic) of the phrases that you have found?

compare the competition with the number of queries... :)

research your competition :)

Use a tool like KeywordDiscovery or WebCeo to measure the KEI (keyword effectiveness index)

I try to rank them based on competition. For example if key1 has 100,000 other listings on google and key2 has 1,000,000 other listings, then you can rank them based on competition level.

The potential traffic is based on the search frequency of the keyword. Overture have a free tool for it. You can also use, wordtracker and google trends. MSN AdLab also gives a clue.
