A couple of strategies that have worked to varying degrees:

A couple of thick (turkish spa) towels folded under her will soak up the worst of it and keep it from soaking all the way into your mattress.

Depending on the height of the bed you can have her put her feet on the floor and her back/butt on the bed. This way she squirts onto the floor. If you have concrete floors like I do no problem.
