Look up beef and stout pie, it ain't the healthiest but it tastes damned good. Also Irish stew recipes can be good.

How bout the basics? Corned beef and cabbage. I know I'll be having it.

I stick corned beef and cabbage into the crock pot with some water and pickling spices. Cod is also popular on St. Paddy's Day when it falls on Friday (not this year, but maybe you'll have the same gf later on ;) ).

I make a pretty mean stew, don't know how Irish it is though. I tend not to put any kidney in it, just a lot of stewing beef. I slow-cook the meat in my XL crockpot for a few hours head start, then add in the veggies and potatoes cut into chunks, then a little of this, little of that... spices, a few good shakes of tabasco, chopped onion, garlic... slow-cooked for several hours more, thickened with some good gravy mix and there it is... one wicked stew that people always want seconds of. (even thirds)

Sorry, no recipe though. I tend to feel my way through it, adding whatever's on hand throughout the cooking process. No two batches are quite the same.

Oh yeah, tip a few snorts of whisky or napolean brandy into that stew.

Can't forget that. The booze is what makes it "irish" :D
