First off, I've been here more than 4 years drinking the tap water and it won't kill you. Although the tap water quality in Jaco Beach is not as good as in the Central Valley, the ice made from it won't get you sick.
A lot of hotels and restaurants will take Amex. Don't bother bringing much cash if you can use ATMs... Jaco Beach has a ton of ATMs that can use the PLUS (VISA) and Cirrus (MC) systems. The BAC San Jose branch in Plaza Galeone in Jaco will do withdrawals from Amex cards 24 hours a day. Some ATMs will give you dollars, but you're better off taking local currency, colones (around 515-520 per dollar). Either way most of the bars and restaurants in Jaco don't have a problem with dollars up to $20 denominations. You'll want colones for taxis and small shops.
The airport is called Juan Santamaria (code SJO). It's in the Central Valley, and on a good day it's 90 minutes from Jaco. If you're baller enough to charter a twin engine from SJO to an airstrip in Jaco, check out natureair.com.
The standard tourist rate for hookers is $100 although some serious deals are to be had (as well as serious rip-offs -- your mileage may vary). Fleshlights will get you snickers and giggles from the customs agents, but they'll let you through.
