I've never had it, just saw it on TV. Maybe somebody from the South can clarify, but what they do is take a frozen block of layered pig meat, fat, and skin, they shave off a strip, boil it, then fry it. It sounds gross but it looked pretty good and I'm going to assume its very similar to bacon.

Cracklin are bits of roasted or deep-fried pork skins. Cracklin bread is corn bread with bits of cracklin in it.
