It was a while ago but we did a camping safari in Tanzania with Overseas Adventure Travel, it was great (in part) because we stayed in tents and not lodges - which meant that we were right in the middle of the action. For example, as soon as the sun came up in Ngorongoro Crater, we were on the road and saw some amazing stuff, because we were camping on the crater floor. The people who were staying in lodges on the rim didn't get down until an hour later, and by then the best sights (lions roaring while fucking, lions circling and taking down buffalo, etc) were pretty much over.
One thing that's worth considering; we added on a three-day gorilla tracking trip (when we did it, it was in Rwanda, now I think they do it in Uganda) - it was the coolest thing I've ever done in my life.
Not sure if OAT still does the camping safaris but they were a great company when we went with them.
