When doing seo on layouts made of 99% images, is it overkill or counterproductive to use alot of keyword text in the alt, or would a single sentence be better than a long string of keywords stuffed into the alt?

What about naming layers & tables etc with keywords, does this matter?

Assigning text to alt tags isn't gonna give you much. Your best bet is to put atleast a sentence in there.

keyword stuffing is not the answer

this isnt 1990 you get one keyphrase per page, link ins, and themes
jamming in 50 is not going to do anything

A simple sentence should suffice, although it won't do much as far as optimization is concerned.
