in general, the stranger the niche the better the conversions. however there's more people who enjoy regular niches as opposed to rarer ones.
so it could be said only 100 clicks to a rare niche converts at 1:100 on a particular site while a whopping 500 clicks to a teen pay site can convert at 1:500, still 1 sale.
but of course it all depends and nobody'll give you a correct answer because there exists none.

I can't speak to how well the niches convert, but if you want to take advantage of what's most popular, the Overture (formerly GoTo) Suggestion Tool can be very useful.

Type in the first word, such as 'amateur' and you'll get an idea of how many searches there were during a 30 day period - usually for the previous month. It's also great for building metatags and site keyword inclusion (note: all results with this tool show only the singular version of search terms.
