Who here makes their own sushi??
 
I eat sushi like every 3 days or so....its just so fucking expensive, & the cuts are never the size i like. So i'm looking to do my own, but i need some logistical help on obtaining the materials in a safe manner.

Tried a couple of times, but like you prolly know its all about getting fresh stuff. Skip the supermarket diy kits theyre crap. And if youre goin for toro unagi etc thats almost impossible to buy in decent aka small sizes.

So what kinda sushi are you lookin for?

Just make sure you have the sushi grade fish and with proper handling should be ok. I did a google search a few months back and there is tons on making their own sushi. Have fun!!

I've always wanted to. That's my favorite aisle in the Potery Barn store. But, it's just always seemed a faster path to gratification to sit down at a sushi bar, eat there or take to go. Love tempura, too.

Yeah sure I have. Though I am sure some will say not to buy the kits I suggest you buy one anyways. It will give you the basic equipment needed and a decent recipe book to boot.

Then well it is just a matter of finding a decent fish monger in your area. Busy ones are best by the way, high turn over and all. Do not expect everything to be sushi grade though. Just find what is fresh and work from there. Oh and practice a lot on making the rice.

Well tempura is pretty easy, dip and fry thats all.

Nothing super extravagent, just simple stuff

yeah get the right rice, dont buy a crappy machine that makes the rolls, thats half of the fun. Look up how to make them and practice in your hand and dont worry, Ive been in plenty of sushi bars where the rice fell apart.

How much are you spending? I found a place with $2.50-3 rolls, they're pretty good too. I'm stuffed after one roll and gyoza, which would be $8, but I like getting a couple different rolls for variety so we're talking about $12-15 which is still pretty good for eating out.

We have a japanese girlfriend who taught her how to make it.
I bought her a bunch of sushi crap from christmas.

I cant stand sushi. blaghhh!

Not really. When I make it, I use seltzer just above the freezing point, sea salt and a batter aerator. It makes all the difference. The crispy batter is so *insubstantial* it will dissolve against your tongue like cotton candy -- :)

oh ok well thats easy maguro (tuna) is what its called, just try different places its not all sushi grade no. Pretty easy ones to start with. All you need is the rice the fish, wasabi sometimes thats put on top of the rice (1 dot - not every sushi bar does that) and thats it.

Yeah I do not make rolls much. I prefer the other umm nigiri I think it is.
Oh and the fact I despise nori with a passion. Though while at a place recently they explained they have a soy based wrap and I tried it. Was pretty damn good so now I am willing to eat rolls as long as it has the soy wrapping.

There are 2 sushi places within a mile of me, but i end up spending atleast $50....so then i started getting it from the local grocery store, they have 2 guys who hand roll all day in the kitchen....for a sushi dinner there, about $16

So $16 for a sushi isn't bad....but the quality isn't the best, the rice sucks etc.

Just seeing if its worth it to do it myself.

prices sure are different here, I can get toro for like $5, I know they sell that for at least 15-20. Unagi too.

I dont like rolls either, esp the calistyle ones.

Anyhow you can make a ton of different regular sushi. So many different kinds of tuna salmon etc already.

Yep, and then there's that. With Fugu, the skill of the chef is in removing enough of the poison so you don't die, but leaving enough to give you a numb-buzz. But, the parasites, are no fun at all.

sushi dinner is around $100 per person in new york.. and thats without alcohol.. there are budget places but they suck but the sushi we have here is amazing
