SPAM Soup

Ingredients:

1 (12-ounce) can SPAM® Lite luncheon meat, cut in small pieces
1 onion, finely chopped
1 stalk celery, finely chopped
1 carrot, finely chopped
2 cloves garlic, minced
2 tablespoons oil
8 cups water
1/2 teaspoon basil
1 bay leaf
3 cups chopped cabbage
2 potatoes, peeled, diced
2 tomatoes, peeled, chopped
1 zucchini, chopped
1 turnip, chopped
1 (16-ounce) can pinto beans
1/4 cup long-grain rice


Instructions:
In large pot, sauté SPAM®, onion, celery, carrot, and garlic in oil until lightly browned, stirring often. Add water, basil, and bay leaf; bring to a boil. Cover and simmer 10 minutes. Add cabbage, potatoes, tomatoes, zucchini, and turnip. Cover and gently boil 15 minutes. Add pinto beans and rice; cover and cook 15 minutes longer. Serves 8.
