Best wine to serve with:
 
Chicken breast; lightly seasoned with oregano, garlic and pepper.


I'm thinking a good Merlot, since its a late dinner.

all this white for fish or white meats and red for dark meats is a complete bull

it all dependes on if the wine is good and the seasoning of the dish

Champagne is not classy. In fact, for almost all occasions it's extremely tacky. Champagne is only good for things like openings and completely random moments like sitting in the park at night with a bunch of friends on a hot summer night.

As for the original question: a Pinot Blanc or a Pinot Gris would probably be good, maybe a Chardonnay. The oregano also makes a Chianti a possibility, although I wouldn't go for that myself.

With the light seasoning he mentioned, a white would probably be best. Things like roast chicken, on the other hand, go well with red.
