It becomes sour, off-tasting vinegar with brown crud in the bottom. The crud is called "mother" because it's what you use to create new vinegar from wine (just like using yeast to make wine from grape juice). It is technically a yeast I believe, but I might be wrong about that; ask a microbiologist.

I love vinegar on my fries, with a pinch of salt & pepper. I also clean my jetted tub with vinegar, and wipe down my cutting board with it. |
