After four disastrous attempts I give up

I googled some recipes so the taste is OK but:

problem number one: the little balls fall apart
problem number two: they get nicely fried on the outside but stay 'rawish' on the inside

my mom's jewish and she's never made falafel. Are you using enough oil? should be about 2 inches of oil @ 350°

well if its not cooking the insides, chances are the oil just isnt hot enough OR you're making the falafel's too large. should be about the size of the spoon and only take 2 mins to cook

bare with me, been a long time since cooking school.

15 ounce can of Garbanzo beans
1 med white onion chopped
handfull of parsley leaves, sort of chopped
2-3 cloves of garlic chopped up
about 3/4 tsp cumin though i like this so maybe 1/2 for most. Guessing though umm it comes out to like a small pile in the palm of my hand.
nearly a tsp dried oregano (never fresh)
Salt and pepper
1 cup dry plain bread crumbs divided into 1/2 cup portions
1/8th to 1/4th cup raisens
Juice from about a half of a lemon
1 large egg yolk
cooking spray like pam or whatever


Dump garbonzo beans onion parsley garlic cumin and oregano in food processor and let it go until smooth. Add some salt and pepper, toss in the lemon juice half the bread crumbs the raisens and the yolk and stir it up.
Wet your hands and make some patties each ball before pressed should be about the size of a golf ball guessing 1 to tablespoons ea. Flaten then out some of course about 3/4 inch thick or so like a burger sort of. You should get like around 14 or so of them. pat on the rest of the bread crumbs. (i toss on a lil more pepper before I add these).
Get out a large frying pan and spray that with the cooking spray. Pam or whatever you want. Heat it over medium until its hot. Add a few patties to the pan and do not crowd them and let there be like 20 seconds before each addition so the pan does not get the heat sucked out of it. Cook them around 3 min or so until bottom looks golden and yummy. Taking pan off heat spray a lil more spray on top of them and flip em, return to heat about another 3 min or so.

I used to do em with oil but that was to greasy so I switched to spray. Oil can be used just use olive oil and brush it on the pan and the falafal before flipping.

Also you may want to adjust seasonings some this is a personal preference from memory and have not made them in some time.

place tinfoil brick on top of falfel

the balls are the right size (smallish), I think the I throw them in before the oil gets hot enough, so that prob will solve problem #2, thanks

Are you including an egg yolk? that really is what binds it, but do not put that in the processor when you mix it all you need to stir that in.

and that solves problem #1, my guess is that the egg yolk and the crumbs will hold the falafel togehter, thanks ;)

I'll have to check if I can find Garbanzo beans here, I went chseking for fava beans or whatever they're called but I didn't find any, but there were like 20 other different kind of beans

They may be called chick peas. I did not look at your location.

if they must be dried then let me know, thats more of a bitch.

yeah, that's what I've used - chick peas
so Garbanzo beans = chick peas, at least I'm using the right stuff ;)
