It was an experiment in leftovers, really. I already had diced tomatoes and half a zucchini. So here's what I did:

splash of olive oil on high
add garlic to brown it
add zucchini slices to brown them
add seasonings, including dried pepper mix
reduce heat
add splash of balsamic vinegar
add tomatoes
hover over min heat until noodles are done

I'm going to do a salad kit that has some lettuces, red cabbage, carrots and sugar snap peas, and add some tomatos, onions, mushrooms, parmesian, imitation bacon bits, peppers olives, croutons and kick it up a notch with slops of fat-free dressing... BAM! :thumbsup
