Gibralter can be a good solution. I would suggest you looking around and research the laws on each respective jurisdiction before making any final choices.

E.g. If privacy is an issue for you, then Gibralter maynot be your best option as the board of directors resides on publically available documents.

Basically each place has its own pros' and cons.

Formation services are offered online, but take care who you deal with and make sure you check them out before handing over any cash.
