Cooked an awesome meal...
 
I just had limjoe and gang over for an awesome meal and figured I'd share some of the recipes since they liked them so much

eroswebmaster was busy painting his nails and Zoe was busy body painting naked 18 year college boys with pastel bodypaints to come enjoy some excellent grub ;-))

Spinach Salad Ala Lance
one bag of baby spinach
1/2 cup white raisins
one orange
toasted pinions or almonds
butter
salt and pepper

take about 2 tablespoons of butter and melt it down, add the toasted almonds or pinions (pinions are too expensive this time of yeaqr, so I used almonds)
wilt the spinach in the butter and lamonds, tossing gently with tongs, add salt and pepper to taste. Zest the orange, reserve the zest. Peel the rest of the orange and dice the orange into small pieces and toss with the spinach. Add half of the raisins. Keep warm.


dressing:
orange zest from one orange
1/2 cup extra virgin olive oil
1/4 cup balsamic vinegar
rest of the raisins

Add the oil to a bowl and whisk in the vinegar. Add the orange zest and the rest of the raisins and whish until well blended.

Serve the warm spinach on a plate on in a dish and spoon some of the fdressing over the salas. You may wish to sprinkle on a couple more diced oranges, raisins or almonds for garnish.


Shall I continue with the recipes for the crab rotelle with white cheddar sauce? How about the Asparagus Marco Polo with Hollandiase?

ok, onto the Asparaus Marco Polo w/ Hollandaise

I use an old recipe called Blender Hollandaise because it works better than traiditional and you don't have to be as precise.

3 egg yolks
1/2 tsp salt
1 tablespoon heavy cream
1 cup melted sweet butter (or unsalted butter if you prefer)
1-2 dashes of tobasco
juice from half lemon or a teaspoon white win vinegar)

Place the egg yolk, salt and cream in a blender and blend at high speed a few seconds until it's frothy. Kep at high speed and add the metled butter in a steady stream but not too slow) and the sauce should thicken. When half the butter has been added, add the lemon (or vinegar) and tobasco (you can also use cayenne pepper). Continue adding the rest of the butter and continue blending until well blended.

Blanch a bunch of asparagus in salted water. Take sliced ham and turkey (just from the deli is fine) take 2-3 stalks of asparagus and roll in a slice of turkey, then roll that in a slice of ham (honeybaked ham rules for this) and set ona foil lined baking sheet. Do this until all of the asparagus is used.
Spoon the hollandaise over the rolls (don't cover them, just drizzle the sauce on) and bake at 350 for 10 minutes. Ifd you wish, you can also roll a slice of american cheese inside the ham and turkey. I didn't with this dish because I already had cheese with the pasta and the hollandaise is a little rich.

my wife is due in early septmeber, but if the baby comes before you get here or hasn't arrived yet, we'll get together for sure...

Drain a small can of unsalted corn and shake well. Stir the corn into the pasta and continue to heat over low heat until the crab and corn are hot.

If the sauce is too thick, dilute it with a little milk.

Optional: add a small to medium diced red or green bell pepper

another option: mix in 2 tablespoons of capers just before serving.

I made an awesome breakfast yesterday.

My girlfriend and her sister had stayed over so I got to flex my egg cooking skills.

I made scrambled eggs with a little milk, 3 kinds of cheese, salsa and a secret blend of spices. I slap em into a tortilla slathered with sour cream, served with sausages, ham and bacon. So simple and so good.
