1 hour. Check with fork. Dont slice into it to test it. Will dry it out if not done.

Answer really depends. What are you trying to accomplish with it?

No you use a thermometer. A fork can not reach near the bone nor will it tell you when its 155 degrees (allow 10 for carry over).
