I could be wrong about this, but I think I remember being told once that the color is the result of all the dead blood cells in your shit; gives it that brown look (keep in mind that blood is red because of the oxygen mixed with it; normally it is a dark purple color and when it dies, turns a brownish shade).

But I could be wrong about that...
