I used to have a sloppy joe leftover porblem as well, but found a way to use the leftovers

heat the leftover sloppy joe meat in a pan (with just a tiny bit of water), then scramble up some eggs in another pan and combine them in a large tortilla with a little shredded cheese (I also add smoked seranos and a little sour cream to mine) They make excellent breakfast burritos.
