Get 5 pounds of wings.
Seperate the tips, the middle, and the lil drum stick portion.
Toss the tips into a bag and save for stock, or just throw away.
Get a pot of oil or a wok of oil (I like the wok) about 1/2 full. Canola oil or vegetable oil is good.
Let oil reach 350-360 degrees.

While oil is heating in a sauce pan put 2 sticks of unsalted butter and 1 twelve or 16 once bottle of hot sauce in it. (franks red hot works very well). Bring to a simmer.

Have a very large salad bowl ready.

Drop your wing parts into the hot oil. Roughly in 3 batches.
Let them fry until the skin is almost transparent.

With a spider (a cooking tool, looks like a wire basket on a handle) remove the cooked wings and place in salad bowl.
Add 1/3 of the cooked sauce and toss to coat.

Repeat until all three batches are done.

Serve with blue cheese dressing and celery if desired.

Opps thats hot wings. bbq will follow.

simple works best - buy chicken wings - but seasoned BBQ chicken wings coating that cooks in a plastic bag in the over - cook for 45-50mins - eat wings.

BBQ wings.

Get a bunch of whole wings. Fold them so they are in a yoga like pose.

Turn oven on 450 degrees to preheat.

Place wings on a wire rack inside of a broiler pan.
Brush both sides with a little vegetable or canola oil.
Salt and pepper both sides.

Place pan in middle of oven for 12-15 minutes.
Flip the wings.
Let cook for another 10-12 minutes.

Place your favorite BBQ sauce in a pan or bowl. Avoid many store brands as they are mostly sugar and will burn.

Take your wings out, turn oven to broil.
Dip the wings in the sauce and place back on wire rack.
Let broil another 5 minutes.

Get napkins and enjoy.

Vinegar is the secret ingrediant in the sauce. It opens the pours on your tongue more so the hot sauce is a sharper taste.

Chicken wings are off the chart in fat percentage and calories, since they are deep fried and suck up lots of grease and you are eating mostly fatty chicken skin as well. Seriously, the Weight Watchers guide says 6 wings equals all the calories you are allowed the whole day.

When frying foods at the correct temp next to no fat from the oil is sucked into the food. Its a simple matter of physics. The pressure of the steam escaping the food from the hot oil prevents the oil from entering the food when done at the correct temps.

If you do not believe me, weigh the oil you put in the pan. Cook some food in it at the correct temp to fry at. Then when the oil is cool weigh the oil again. At most you will be missing a whopping 2-3 teaspoons worth if your cooking alot of food. Sometimes with certain foods like wings, there will actually be more liquid than you started with. I.e the fat in the wings rendered off.

Yes you are eating chicken skin, oh no. Just skip a little pre made food for a bit that is loaded with corn syrup and you will be fine.

Spices: (please if your spices are older than 6 months buy new ones)
2 tbls celery salt
1 tbls cayenne pepper (adjust to your heat level, gets stronger longer you cook it)
1 tbls cumin
1 tbls garlic powder
1 tbls pepper flakes (also adjust)
1 packet goya ( Click if you dont know what this is. Available in cuban markets) It is optional.


Wet stuff:

1 & 1/2 cups Chili sauce or ketchup (I like Chili sauce)
1/3 cup maple syrup (real maple)

1/4 cup whiskey or rum
2 tbls worcestershire

Put everything in a sauce pan besides the whiskey/rum, mix very well and simmer for about 15 minutes stiring often. It should look pretty red. Take off heat and stir in the whiskey/rum and use as is or baste your food.

You may add booze during the simmer time if kids shall be eating this to evaporate the alcohol.

I used to own a Dunkin Donuts shop and the raw weight of a yeast donut going into the fryer was 1 3/4 ounces and weighed over 3 ounces when removed a minute later. It doubled in weight by absorbing the shortening.

Here is a nutritional fact about wings:

Carbohydrates: 11.4 g
Fat: 27.4 g %
Calories from Fat: 57 %
Cholesterol: 160 mg

Do not know about how donuts react in oil or shortening in your case so I believe you.

As for the nutritional data, again that is generally pulled from some franchise place or pre-packaged crap. You can tell by looking at the sodium levels. Also the carbs look mighty high so I would think wherever they pulled that data from also breaded or coated their wings in flour or something.

Multiply the sodium levels there by 4 and look at your other stats. Even they do not agree. They are testing odd ball places.

Either way really who cares? Eating is one of the few things we all must do. Enjoy it and eat wisely. That way you can splurge on occassion.

Yeah, I am just going by google searches so neither are from definitive sources, but at least you will agree that if not in moderation, wings will fuck your system up bad.
