Remember.....with kittens, the important things are getting the sauce right (can't be too spicy, overwhelmes the delicate flavour), and not letting the meat get dry in the cooking process.

Hmm quick list of must haves though.
Large cast iron skillet, thick stainless steel frying pan, saute pan, medium and small teflon frying pans, large stock pot, 2 qt pot, 6 cup pot, lids for everything, spring loaded tongs, plastic spatulas, steamer tray, pizza stone, lots of pyrex dishes, quality knives+stone, plastic cutting boards, microplane, electric water heater, welding gloves, digital probe thermometer.

I could go on but doubtfull it would make my must have list.

Man, I'm just a redneck guy...so I didn't know any better and went out and spent too much money on some stainless steel shit, without the non-stick coating. What a waste!

Since I got burned, I tend to go for quantity over quality now. :winkwink: I try to have something on hand for whatever I feel like making, and it has to have lids and be non-stick. But I don't care too much about the name.

I also just like to have lots of knives. Is that a bad thing?

But I never understood the purpose of those gas barbecues. You need a fire with charcoal to cook real barbecued meat :)

The on y way to go. A Dynasty built in. This was taken over a year ago on the day it was installed. Still needed the electricity wired for the fridge.

This year we added a stainless steel backing on the wall above it, a custom Bar and Full kitchen sink area with cabinets etc.
Next year I will probably replace it with a 42-50" viking, add a stainless steel hood above it.

I love this stuff!

I enquired about their courses (they're just around the corner from me) - I got told $50k a year, (Australian $$) - I was shocked, college here is $5k AUD max..
