Lets say you book 3 models for a shoot, would you say it makes sense to shoot all three in a scene, two scenes of duo action and, three scenes of solo action in one day or is that expecting to much from the models?

They are of course being paid on a 'per shoot' basis irrespective of how long the shoot takes.

Basically they get paid for 3 shoots each instead of one.

Dude! Fuck the hourly thang - tell em that for $500 - $600 you expect them to be there on time, from sun-up to sundown, work all day, look good, and don't complain. If that's not what they are expecting, fire them before you hire them. Mc Donalds is hiring freindly faces for minumum wage. It's a competetive business and tons of talent is available to do this simple job for great money for very little effort. Just shoot as fast as you can and hire an assistant or 2. Feed well. Get model releases signed when they arrive, pay them when they leave. If they get snippy, tell them that they can leave at any time with partial or no pay. Tell em you may send em to me and I'll pay em twice as much 4 days a week if they are good to you, and retain a posetive professional attitude.

Exactly, we pay models $300 flat fee for 4 hours, 3 hours of photos (6 different scenes) and 1 hour of video (2x30 min). If they don't want to take it, CYA BITCH!!!
