Hamburgers! How do you make em?
 
About to start digging into this ground beef and I was wondering what you guys add to your chuck before grilling em up?

A little fresh ground black pepper, some Kosher salt, maybe a some Worchestire. Good beef does not need much.

Perhaps, some red pepper flakes to slightly spice things up :)

guessing its to late but ussually another ground meat for flavor like pork mixed in with the chuck.

small amount of bread crumbs.
finely diced onion, garlic and peppers.
salt and pepper.
lil worchesthire sauce in mix or brush on.
never more than 1 egg.

on occassion I flatten out two patties pretty thin, place a tablespoon of blue cheese in middle, sandwich the patties and seal the edges.

Also never press the burgers when grilling. ya loose the moisture and flavor.

Oh and brushing the tops with bottled chili sauce is tasty too.

Ground sirloin would be bad unless ya mixed in some sort of ground fatty meat. Sirloin is way to lean.

it's great and good for you too. I always throw in a bit of chopped onion and a little garlic (sometimes garlic salt if I dont have fresh around).

the secret of course is brushing with soy sauce while ya cook.

milk
chopped up onion
salt
pepper
egg

egg makes sense. using more than 1 per 2 pounds of meat would be bad though and make burgers tough. The milk would lend a little extra fat to the burger, provide a little extra moisture, and give it a richer taste.

Although a jar of beef baby food will do the trick instead of milk, if you like that rich flavor.

remove bacon and leave fat in pan.
add in onion slices and cook until carmalized.
remove from pan.
mix onion, bacon, and a lil bbq sauce.

then put between the burgers and seal.

I do this when I make the blue cheese ones and have people over who do not like blue cheese.

Cheap? I don't think we have the same concept of "cheap".

I'm gonna buy hamburger buns and beef at the grocery store and you go buy McDonald burgers with the same amount spent. Let's see who saved more.

Pretty much what I do, but I use Garlic Pepper. Be sure you DON'T use lean ground beef. You need the fat in it to make the juciest burgers in town.

Then grill to perfection, about 3-4 minutes each side. Oh, and you HAVE to use sesame seed buns! :winkwink:

I use a recipe from the Zuni Cafe in San Francisco.

I buy chuck, cube it up and salt it with kosher salt overnight. I grind it up in the food processor, form the patties add pepper.

If Im only making a few I fry them in a cast iron pan which gives a great crust otherwise I grill them and top with a good Gruyere cheese.

Serve on warm herbed focaccia with garlic mayo and red onions :)

Yum!

Salting a chicken the night before you roast makes it perfect too!

not exactly a way tomake the meat but a way to eat it with:


burger #1:
beef
pickles
onions
tomatoes
hot sauce
ketchup
mustard
and any kind of bread

burger #2:
beef
LOTS and LOTS of mayonase and LETUCE
ketchup
bread

burger#2 RULES for me right now lol :1orglaugh
easy to make and taste GREAT!

yeah, what he said.. and also.. my mom told me to put that in :thumbsup

after eathing them though, I think Im gonna try with some more spices though like chili sauce. If you want to eat the burgers without bread try eating them with mash potatoes like this:

boil potatoes soft
mash em
put in a bit of salt and a bit of milk
stir it
put in butter
stir it fluffy and without lumps

trust me, best mashed potatoes you'll ever have :thumbsup especially if you put fried onions on it
