Mexican food?
At the taco trucks they have this Carrot, Onion and Jalapeno mix in some kind of vinegar and the veggies stay really crispy.
It's just so fucking good. Anyone know how to make it? |

its just veggies thrown in the pickled jalapenos... you too can have this.. buy a jar of jalapenos already ..cut up some veggies and throw them in the jar with the jalapenos and let it sit for a day or two... voila... you got your veggie/jalapeno mix
u might have to get a big jar of jalapenos to do this.. if it s small one buy two.... the veggies have to be totally immersed in the liquid for them to pickle good eating :thumbsup |

Fajitas are the best! Chicken fajitas kick ass! Infact I'm gonna go out for dinner tomorrow to have them now!

Rolled Tacos with Guacemole and cheese with the hot sauce on top was where it was at when I ate meat.

i am addicted to nachos and fajitas... i get creative with them and use all kinds of meat and seafood..and a variety of beans.. or bean entrees such as chili...
i even make a great meal called a "mexicali salad".. salad greens... add a big ass helping of chili (preferably veggie chilie)..sprinkly with chopped tomatoes, green onions, cheese..top with sour cream and guacomole and hot sauce and or jalapenos..and chow down...fuck this is making me so goddamn hungry!! TIME TO COOK!!!!!!!! ps. escabeche means pickled |
-get the jalapeños, cut in slices
from here, 2 steps: boil them in half vinegar, half water and a touch of oil (2 parts of liquid for each part of jalapeños). cook for 15 minutes after it boiled at low flame. If you want to go thru the full "escabeche", add onions and carrots in slices, grains of pepper, garlic (optional) and cook at very low flame for about 45 minutes. Put in an extremely clean glass jar and close hermetically. This will last for a couple of months if closed another way (pickle): just get the jalapeños, the carrots in very thin slices and the onions in slices or those little "cambray type" onions and "blank" them in boiling water with salt, cut cooking with a stream of cold water, put everything in a jar, fill with vinegar until it covers all the vegetables, leave it for one week and... voilá! you got it :thumbsup |

Anyone know what that orange drink is called that you can get at some Mexican restaurants? It's kinda light and fluffy like it was Orange juice whipped with an egg. |
