Hey Wired Guy nice to meet you, seems you are well known here :glugglug We have just launched our new paysites and affliate program. I've never done any search engine work at all.... I have always done galleries and design work.
I have put meta tags in our pages but never had the time to really look into how it all works... So i guess I'm search engine virgin :glugglug Anything you can tell me about them would be cool... We are looking for someone to do it full time for us.

Looks like you need to hire someone. Here are what you need them to do:

1. create free "gateway" sites to promote your paysites
2. improve your keyword density on your paysites
3. improve your PR

realize that you won't get a ROI on your investment for about 6 months to a year and that the cost of doing all this is pretty high. however, 5 years down the line, you should still be getting signups from the work an SEO does, if it's done right.

one piece of advice:
don't let them spam the SE's. make them create a win-win-win situation. the surfer should find the kind of content he's looking for so target your searches carefully and that automatically makes the engine happy and you too.

PS. also, you might want to rethink how you design your tours. right now there isn't much to optimize but with a different style of tour, you could really stuff your tours with lots of keywords and hence SE traffic.

Before you go hiring an SEO, I would strongly suggest giving pay per click search engines a whirl. Basically to give you an idea of the kind of performance your listings will get and from there you can forecast if scaling the operations will be profitable. I also have a few recommendations I can make for resource sites to get a feel of the market first:

http://www.webmasterworld.com/ (the best forum to discuss SEO)

As well, some words of caution, be very careful of companies you hire to do your SEO if you get an outside firm, ask very specific details of how they plan on getting you listings since a banning from a SE can severly hurt your business. And be weary of SEO's who claim to guarantee top rankings.

Apart than this, any specific questions I'm more than happy to answer for you.
