2nd HD, every day.

I also have an exact mirror of everything at a different location.

Get a RAID volume 1 or 5

This way your data is automatically backed up. I would invest into some decent Seagate harddrives and a good Adaptec RAID card.

You can follow the other guys advice and just setup a crontab to copy to a different harddrive but the RAID does it automatically at the time that the data is written, hence its practically 0 data loss in the case of a problem.

To take it to an extreme, usually used for backing up financial data, I would either backup to a different machine, preferably in a different physical location entirely, OR backup to a tape drive and collect tapes every so often from the data center to introduce physical redundancy as well.
