Can you add metadata keywords, copyright info, descriptions in a edit video, like you can with an image?

Yes, but it also depends on the format and the editor

Not a problem. It uses Extensible Metadata Platform (XMP) and is based on XML files.

Depends on format, codec and editor

Most trancoders strip it, there is no fit-all answer when it comes to editing
