I don't know anything about soccer, can someone tell me why they added 5 minutes at the end of the game? How does that rule work?

During the game you have injuries and other situations where game is stoped but clock is ticking. They count +- how much time was wasted on these situations and add it as extra time.

I was curious why did they stop at 4:56 or something, even did not wait the whole 5 minutes while there was a situation with stopped game during that extra time. Shouldn't they stretch those 5 minutes to something like 5:20 because of that?
