I am currently using wordpress with a site built from artisteer just so that I can easily update it. But artisteer doesn't have all the options for what I am looking for. It is not in depth enough and doesn't have enough options. What did you guys use to build your sites?

Wordpress or Drupal. Lots of VERY nice, VERY versatile themes have been developed for both.

Wordpress has enough plugins to pretty much build whatever it is you want to. My best advice is to learn WordPress and then you'll understand what the fuck I'm talking about.
