Make sure if it is Nitrite free, it hasn't got celery seed in it, if it has, it isn't nitrite free :)

Or did you make it yourself? I've tried 1 pork loin so far, tasted too salty and jack daniels wood chips made it taste a little weird :upsidedow

according to the butcher, the cooking process does create *some*? nitrites, does that make sense to you? he said even though it is cured nitrite free that the zoe's peeps told him frying it creates nitrites. i think there are some that the frying process does not create them??

i look at it this way, it's the same price, it's actually fresher because they can't use nitrite preservatives, i get it frozen, nitrites are pretty bad, and most importantly-

it tastes fantastic! it's bacon. :)

I think pink salt (which makes bacon pink) has nitrites put into it already. If you cured it the old fashioned way, you use salt, sugar and celery seed (which has nitrites).

If you cured it yourself like I have tried doing (and need to try to do again), you can skip the celery seed and just use kosher salt and sugar.

The Nitrites ain't the problem as such, if you ate bacon raw. Nitrosamines (think that is the correct spelling) are the carcinogens created when you cook nitrites with amino acids (meat)

It's something like nitrites + amino acids = nitrosamines.

I agree, I don't like the taste of wheat grass, but my body craves it.

What kind of juicer do you use/recommend?

Well, it definitely keeps me regular; and that is a good thing. The nutrition info says all Daily Required Vitamins, 800%+ Daily Required Vitamin C, 15g of Whole Grain & Fruit Fiber, 23g of Protein including ALL Required 22 Amino Acids, Carbohydrate Glycemic Index Rating 21, all 22 Required Minerals, 5000 ORAC units of Antioxidants, 5000 mg of Omega-3 Fatty Acids, Beta-Carotene, Retinol, Vitamin E, Thiamin, Riboflavin & whatever is in the yogurt.

If nothing else, I am never constipated and my body at least thinks I am taking care of it.

Richard, you should try Cornbread pancakes. I saw the recipe on the side of some cornbread mix, made a batch, served with butter and syrup. I don't think I will ever have regular pancakes again.

As far as the bacon, when I make bloody marys, I put in a crispy slice of bacon
