I eat the skin and love it ! My son (A Grown Adult - Not a 'Fussy Child') scrapes out the insides and leaves the skin. He says I'm weird lol

Yep. As others have said it's the best part. I just checked to make sure of that though, and apparently it's just a myth (fuck, is anything we are told true?). I eat the skins on boiled potatoes too, partly due to that myth, and partly sheer laziness.

I eat the skin but we're very fussy on the type of potatoes we use. My fiancee doesn't, she is like your son, scrapes out the inside and leaves the skin.

russet are the best around these parts for baking for sure. A lot of the nutrients in potatoes are carried in the skin so i would recommend eating it. I tend to cook them a little longer to get them crispy, tastes pretty much like a chip.

unfortunately i can't eat these at all right now though as i am on a low carb diet.. hehe

I eat it all. Even when I make mashed I leave the skins in there all chopped up of course. If you do baked potatoes on the barbecue and then don't eat the skin you're tossing away all the flavour.

The skin and just underneath the skin is where the most nutirients are.

I haven't had a baked potato for years. But the skin, as long as it was crispy was the best bit.

You need a gas or wood oven for a good baked potato, electric doesn't quite get it.

If I cleaned it myself I eat the skin its great when its nice and crispy after 2-2½ hours in the oven.

Anywhere else I skip the skin.

Boil baked size potatoes for a bit so they are almost ready, half them, put them on the BBQ with both sides getting the heat thats the best potato for me :thumbsup

I second the Russet, followed by the Yukon gold. Really any starchy potato will do. Always rub with a little butter beforehand and generally, the crispier the better.

I partly nuke mine, baste it with olive oil, then finish it off on the bbq. Love the skin:thumbsup
