Many years ago I worked with a guy who had a similar situation only he had a crotch rocket bike not a Harley. Hit the dear, flew over the handlebars and broke several ribs, broke an arm and his collarbone not to mention some nice road rash in a few places (even though he had leathers on).

:2 cents: It was a good reaction to pick up the bike before other cars approach,even if he has not watched back for coming cars.

That's what I thought too, then I checked the actual youtube video, and he was in a race of some type, so even more important I guess.

The deer was knocked to the shoulder of the roadway. When the racer got back on, his helmet cam pointed towards the spot where the young deer was and it was gone...probably received a couple of bruised ribs and deer are pretty sturdy creatures anyways.
