Fine, i'll share my recipe for the best mohito. I expect many paxum and paypal deposits for my generosity.

MINT INFUSED SIMPLE SYRUP:
1 cup water, 1 cup sugar in a saucer at high heat. Stir every few minutes until sugar granules are dissolved in water and remove from heat. Add 10-15 leaves of mint on top and let sit for 15 minutes to saturate the sugar with mint flavor.

MOHITO RECIPE:
Add - 2 ice cubes, 1.5 ounces of simple syrup and 1.5 ounces of rum (prefer appletons white rum. bacardi ok) and 5-10 leaves of mint - use a wooden stir spoons end to crush the leaves (5-10 good hits) and infuse into the ice and alcohol.

Top with 1.5 ounce (or 1/2 a lime) juice and add more ice and carbonated water to taste.

1st ones a tester, the next will be golden.

btw, look up for "fee brothers mint bitters" they taste excellent in a mojito if you don't have fresh mint.

also agave syrup can replace any kind of sugar or symple syrup much better.

tbh, as a mojito fan, i tried various other versions and the normal mojito is now kinda boring.

try using tequila or gin instead of rum, lemon lime soda instead of regular soda, as said above agave nectar for sweetener, or even try to make gin-tonic-mojito :)

I agree, the crystals in the sugar help to extract the oils from the mint when you muddle, plus you get more fresh mint flavor than if you put the mint in the hot water where it would slightly start to cook. I use a mortar and pestle.

Normally its beer, wine or Scotch/bourbon only.. but a well made Mojito or Margarita on a hot day is sometimes warranted.
