You also shouldnt start them with And or But. But I do it all of the time. And thats just how it is. So it's no biggy to me.

Just go back 10 years in American history to the year 2001 and ask yourself the question: "Did people start sentences with the word So at that time?" The answer is no.

I cant figure out what prompted this irritating, weird, grammatically incorrect form of sentence construction.

I am not that up on grammatically correct sentence structures. SO, I have been known to start sentences with SO :1orglaugh

i use it to break it up when someone is being annoying.

Sadly for you, most internet conversation is not written in proper grammar.

Most people in general do not reply to everyone in general conversation, whether real world or online, as if they are writing an essay. Whether right or wrong. Either way, it sounds like you need to switch to decaf and come out of the bell tower.
