Minced anchovies, garlic, olive oil and breadcrumbs - toss with spaghetti. Awesome dish from Messina, Sicily.

Fresh, they are nice grilled, or dusted in flour and fried.
fillet them and marinade in lemon/garlic/parsley. Or the salted ones are nice in a sandwich with loads of rocket. The reason they get too salty is, although preserved they should be kept in a fridge and be good quality. What do you pay for anchovies? Here they got from around $1 a tin to $20 for the top grade ones. |

nobody mentioned the wine? enormous amount of wine which fits best the salty bastards? just anchovies, or salty sardinas, bigger and much more salty, on the platter, with olives, olive oil, hard cheese, red onions, bread from stone stove and gallons of wine with water (so called bevanda)

one of the key ingredients of worcestershire sauce are anchovies because it's a natural flavor enhancer and there is almost no cooked meat meal where i don't use it.
