Minced anchovies, garlic, olive oil and breadcrumbs - toss with spaghetti. Awesome dish from Messina, Sicily.

Fresh, they are nice grilled, or dusted in flour and fried.
fillet them and marinade in lemon/garlic/parsley.

Or the salted ones are nice in a sandwich with loads of rocket.

The reason they get too salty is, although preserved they should be kept in a fridge and be good quality.

What do you pay for anchovies?
Here they got from around $1 a tin to $20 for the top grade ones.

I like pretty much every fish, if it still tastes like fish. Sadly some canned stuff could be as well some alien's toes salted, spiced and stuffed into can.

nobody mentioned the wine? enormous amount of wine which fits best the salty bastards? just anchovies, or salty sardinas, bigger and much more salty, on the platter, with olives, olive oil, hard cheese, red onions, bread from stone stove and gallons of wine with water (so called bevanda)

I have some anchovies with capers! midnight lunch...

one of the key ingredients of worcestershire sauce are anchovies because it's a natural flavor enhancer and there is almost no cooked meat meal where i don't use it.

I love fresh anchovies, simply amazing.

Canned is too salty but I do eat them on pizza, salad, and will even mix them into Italian food or potato salad (remember to lower the normal slat used to make the dish)
