Another Beer Can Chicken Success {pics}
 
Did another beer can chicken on the Q on Sunday -- and it was the best yet.

Blocked the neck hole with a whole clove of garlic, used a can of Creemore Springs Ale, and seasoned the bird with sea salt, mixed herbs, and seaweed.

The gravy I made with the drippings, and the beer with some garlic.

Soooo tasty :thumbsup

And I promise you -- I will. I have some friends coming round on the 16th, and I am going to do a capon on the Q. I will soak it in the brine over night, as you have instructed, and cannot wait to taste it. I know it is a piss poor excuse, but I just didn't have time to do the brine soak this weekend :(

Do pre taste any gravy you make from a brined bird though before adding additional salt. Often it has plenty.

This chicken wasn't that big -- and was on the grill for about 2 hours. I keep the temp at about 350F for the first 1 1/2 hours, and then crank it to 450 for the last 25 minutes to crisp / brown it off.

The liquid in the container (can) will eventually steam/boil and thus steam the bird from the inside. The steam can/will carry some of the flavors of the liquid used, penetrating the meat. It also has the additional benefit of keeping the the breast meat more moist. Though I personally feel that the membrane around the ribs blocks a lot of it, so you should pierce it many times (inside cavity that is).

You could swap out the aluminum can for nearly any other object, like say a stainless vegetable can. I do not have issue with aluminum being used for cooking in general though since I use it as foil, cake pans, etc. As for the inks - no damn idea and is also why I have typically used other cans.

Fish curry? That sounds horrible, the only way I can eat fish is if it's grilled or baked, soups, stews, etc. totally freak me out.

Well, aluminum foil is used in cooking all the time. And the can is not exposed to a direct flame -- so there is very little chance of it melting.

On a side note. That chicken in a can is the grossest thing I think I have ever seen. I cannot imagine eating that :(

Fish curry is the staple diet in coastal regions of India (Goa, Kerala, etc.). I first had it at the Cafe Spice Namaste in London, and it was quite delicious. I recently made curried Basa (catfish) with jambalaya :)
