Say I own itsblogging.com and its not big use now. Is that ok using it for adult blogs, say with subdomains like nylonfetish.itsblogging.com or similar?

Or may be it's better to make a general site about making money via blogging, a pay site about all this 'knowledge' with e-book and such?

Both ideas are ok and can be done.

use subdomains and work as hard to get your subdomains backlinked as you do your index page.

Nothing wrong with using subdomains. Just make sure you get lots of links to them and for the best results: don't interlink those subdomains too much (or at all if possible).
