Tabouli is delicious, healthy, and easy to prepare:
Classic salad that tastes better the longer it sits in the fridge
Ingredients
1 cup bulgur wheat
1-1/2 cups water
1-1/2 tsp salt
1/4 cup lemon juice
2 tbsp olive oil
4 tbsp onion
1 cup parsley
1/2 cup fresh mint
4 tomatoes
Directions:
Add bulgur wheat to boiling water and let stand for 30 minutes
Combine oil, lemon juice, garlic, salt and pepper
Finely chop parsley, onion, mint, and tomatoes
Mix all together well
Chill for two hours in refrigerator
Tabouli goes well with many foods, and is a good warm weather dish.
2.5-3 lbs frozen chicken tits
1 teaspoon salt
1 teaspoon pepper
2 teaspoons chili powder
2 teaspoons cumin
3 chipotle chiles in adobo, chopped
1 (4 ounce) cans green chilies
1 (7 ounce) cans salsa verde
1 cup onions sliced
2-3 teaspoons garlic, minced
1 cup chicken broth (I ran out of chicken broth this time, so I used a pack of chicken flavored ramen noodle seasoning and a cup of water and cut the salt in half, lol, worked great!)
Directions
1. Place frozen chicken tits in large crock pot and sprinkle with the salt and pepper, chili powder and cumin.
2. Add the remaining ingredients and simmer on high for about 3 hours or on low for 4-5 hours, until chicken tits are done.
3. Shred the tits with a fork and simmer on high for additional 10-15 minutes.
4. Serve in enchiladas, tacos or on crusty rolls with the juice for dipping.
